Happy Friday the 13th!! To celebrate football season (my Ohio State Buckeyes!!!) and the holiday season I wanted to share this Protein Buckeye recipe I found. I love chocolate and peanut butter and these make me feel a little less guilty!! The original Buckeye Candies have a few more ingredients that make it a little harder to watch your waist line, but these are amazing and you can easily put them back like no big deal!!
What you need:
1 cup creamy all natural peanut butter (In this batch I used all natural crunchy and they were just as good!!)
2 scoops vanilla protein powder (I played around and used 1 scoop vanilla and 1 scoop cake batter)
2 tbsp honey, organic and local if possible
1 tsp vanilla extract
1 cup dark chocolate chips (I used Lily’s)
1 tbsp coconut oil, virgin-unrefined
Combine the peanut butter, protein powder, vanilla and honey and mix until a dough forms.
Next I used the tablespoon to scoop out the dough and then rolled it into a ball.
Once they were all formed I stuck them in the freezer to firm up. While in the freezer I got the chocolate ready.
You can melt the chocolate anyway that you like. I tried the microwave way (ten seconds at a time until it’s melted, but I ended up charring my chocolate…😑) Instead, I brought a pot of water to a boil and placed a glass bowl with the chocolate chips over it. It doesn’t take long and it doesn’t burn!! Once the chocolate is melted add in the coconut oil.
Next it’s time to make these look like Buckeyes! I placed some chocolate in a smaller bowl and dipped each ball almost covering the entire ball. I used a fork to remove them from the chocolate to allow the excess drip off.
Finally I placed them in the freezer for about an hour (or until you can’t wait any longer!) Enjoy!!!
